Chèvre is a soft, creamy French goat cheese that has delicate herbal notes. It's wonderful simply spread on baguette slices, crostini or crackers, or oftentimes in the company of figs and prosciutto as a fancy appetizer. But guess what? It can also become a great "pasta sauce" when you're in a pinch. When your pasta is still warm, top it off with some hearty chunks of chèvre and give it a vigorous mixing. You'll find that the cheese will melt nicely, coating your pasta with a touch of lusciousness. Tastes lovely with sun-dried tomatoes and freshly torn basil leaves.
