Halibut Steak with Garden Herbs & Garlic Oil

When it comes to seafood, some people are at a loss about what to do. Here's one the easiest tricks in the book.


1 halibut steak (or a fish or shellfish of your choice)
2 cloves of garlic
A smattering of herbs (I used sage, mint, basil, and a bit of rosemary from the garden)
1/2 lemon
Extra virgin olive oil
Sea salt
Freshly cracked black pepper

1. Chop up the garlic and herbs and scoop into a small bowl. Pour enough olive oil just to cover. Squeeze lemon juice into the bowl. Mash it all up with a spoon and let it sit for 30 minutes or so.

2. Lightly season your fish or shellfish with salt and pepper. Rub both sides with the herb and garlic oil.

3. Grill, broil, or saute until it's cooked to your liking.
